Asian Dressing

Ingredients
    2 cloves garlic, finely chopped
    1 red chillies, seeds removed, roughly choppedasian recipes
    1cm root ginger, grated
    1 tbsp palm sugar
    2-3 tbsp fish sauce
    1-2 lime, halved
    1 splashes water
    2 shallots, thinly sliced

To serve
    1 handfuls cos lettuce
    1 handfuls cherry tomatoes, halved
    mixed fresh herbs, such as basil, mint, flat-leafed parsley, coriander and chives
    1 small handfuls chopped peanuts

Method
Put the garlic, red chilli, ginger, palm sugar, fish sauce, limes, water and shallots into a pestle and mortar. Mash together well, making sure the garlic and chilli have been pounded into a pulp. Remove the lime halves.

Arrange the lettuce, tomatoes and herbs in a salad bowl and pour the dressing over. Toss well and scatter with the peanuts. Serve straightaway.
