Coconut Ice Cream with Gula Melaka and Fortune Cookie Crush


This ice cream was so simple to make and I did not have to use an ice cream maker. Do use good quality canned coconut milk for this recipe. The milk should be white and not creamy in colour, coconut milk also comes in cream or block form but this is not suitable.asian recipe


Ingredients:
400ml Coconut milk
225g Sugar ( 1 cup)
2tbsp Sweet desiccated coconut
200ml Water
228g Whipping cream
300g Gula Melaka or palm sugar
150ml Water
Fortune Cookies (crush 1 per serving)

Method:

Place sugar and water in a small saucepan and heat to melt the sugar.

Remove from the heat, add desiccated coconut and allow mixture to cool completeely.

Add coconut milk to the sugar syrup and mix well.

Whip cream until it stands in soft peaks and fold into the coconut milk.

Place bowl in the freezer and when half frozen stir to break up the ice particles.

Place bowl back in the freezer.

Again remove bowl and break up ice before ice cream is frozen and spoon mixture into a lidded plastic container.
Allow ice cream to freeze completely.

Melt gula melaka or palm sugar in sufficient water to make a thick pouring syrup, allow to cool.

To serve, scoop icecream into a bowl, drizzle with guls melaka or palm sugar syrup and top with crushed fortune cookies.
