Sweet and Sour Chicken or Tofu and VegetablesFrom Whole Foods Market
The popular dish of chicken or tofu and veggies in a sweet and tangy sauce is simple using whole-grain chicken nuggets or pre-baked tofu or try our Easy Baked Tofu. Serve with brown rice.
1 tablespoon canola oil
2 carrots, sliced
1 crown broccoli, cut into small florets (about 4 cups)
1/2 yellow onion, roughly chopped
1 red bell pepper, sliced
3/4 cup EARTH University frozen Pineapple Chunks, thawed
12 Nature's Rancher Whole Grain Chicken Nuggets (from 2 packages), prepared,
OR 1 (8-ounce) package Thai or teriyaki baked tofu, cut into 1-inch cubes
1/3 cup San-J Asian Glaze & Stir-Fry Orange Sauce
Heat oil in a wok or large, deep skillet over medium-high heat. Add carrots, broccoli, and onions and cook, stirring often, until crisp-tender, 8 to 10 minutes. Add peppers and cook 2 minutes more. Stir in pineapple, chicken (or tofu) and orange sauce and cook until hot throughout, 2 to 3 minutes.
